Cheesecake with blueberry sauce

Blueberry Sauce


  • 1 cup fresh or frozen blueberries
  • 1/4 cup sugar
  • 1 1/2 tsp lemon juice
  • 1/2 tsp lemon zest
  • 1/4 cup water
  • 1 tsp cornstarch
  • pinch of salt


  • In a small saucepan, combine the sugar, cornstarch, and salt. Slowly whisk in the water until smooth.
  • Add the blueberries, lemon juice, and lemon zest.
  • Bring to a boil over medium heat, stir constantly. Cook until thick, about 2 - 3 minutes. Some blueberries will remain whole. Makes 3/4 cup.
