Chimichurri Sauce (Spicy Green Sauce)

Chimichurri sauce is an easily made fresh herb sauce with a bright, spicy flavor. It comes from Central and South American cuisine and is traditionally used with beef, as either a marinade or a sauce.

And it is lovely with beef, but it’s also soooo pretty and has such a great flavor there is no reason it can’t be used with veggies, poultry, fish, whatever you want. I particularly like it with spicy sweet potatoes. 😀

Just throw everything into a blender. Voila!

Put everything in a food processor, blitz, use.

Ingredients
  

  • 1 bunch parsley
  • 1 bunch cilantro
  • 2 - 3 whole green onions
  • zest of 1 lime
  • juice of 2 limes
  • 2 fat garlic cloves
  • 1 - 2 seeded peppers of choice jalapeno, serrano
  • 1 1/2 T apple cider vinegar
  • 1/2 tsp salt
  • 1/4 c olive oil
  • 1/4 c water

Instructions
 

  • Put everything in a blender and blitz until it turns into a liquid. Makes about 300ml (10oz).

Notes

It's ok to use a large portion of fresh herb stems - there's tons of flavor in the stems. No need to only use the leaves.
Some recipes use only parsley, some use parsley, oregano, cilantro and/or basil. It's OK to use lemon instead of lime. The water is in the recipe mostly to give the blender something to "churn" with.
